Fresh veggies from my garden
I am NOT a gourmet cook. I'm too white trash for that. :) I like to think of my cooking more as classic comfort food. I don't tend to use anything to exotic. But I am willing to try anything as long as it is not too expensive and one of my friends will be willing to eat it. So if you're looking for some great family recipes you came to the right place.

Stuffed porkchops

This is a simple recipe that I threw together one day. You will need 4-5 boneless porkchops. 1 cup each ground linguica or chourice (these are portuguese sausages), uncooked Stove Top Stuffing and cut up baby bella mushrooms.
Pre heat your oven to 375.

You will need a baking dish and some string. Cut lengths of string that are long enough to wrap around and tie each chop. 2-3 strings per chop depending on size.

In a skillet sautee the mushrooms and ground sausage in EVOO (or butter) for about 5-7 minutes on med-low heat. Enough to partially cook the meat and get the mushrooms tender. Don't over cook. Now mix this with your uncooked stuffing mix.

Lay your pork chops out on the pieces of string. Divide stuffing mixture onto the pork chops then securely tie each one up. Place in baking dish.

Cook until chops are done. 20-30 minutes maybe. This cooking time will depend on how thick the chops are to begin with. Remember, never under cook pork!! The juices from the cooking meat with cook the stuffing mix.

I f you don't live in an area where these sausages are available use your own favorite! Next time I make these I will take a picture so I can post. I thought I would start my blog with one of my original recipes. Since it has been awhile since I made these I don't have a photo. ENJOY!!
