This is my own creation as well as one of my favorite treats! For me it is a very time consuming project. Takes me about 2 hours total prep time. But I move slow, arthritis. The most time consuming part is the pealing, coring and slicing of the apples. I do it all with a knife. Gotta get me one of those coring thingies. Or an elf or fairy. No matter how long it takes you, I promise it will be worth all the effort.

You will need the following for the apple part. This is a 3 part recipe.
~ 8-10 Lg or 10-12 Med Granny Smith apples
~ ½ cup brown sugar ( I use light brown)
~ 1/4 cup white sugar
~ 2 t cinnamon
~ 1 t allspice(or pumpkin pie spice)
~ ½ t ground cloves
~ 2 T cornstarch (more for thicker consistency)
~ 2 T maple syrup
~ 1 ½ t vanilla extract
~ 2t lemon juice
~ pinch of salt
Now all the hard work begins!
Peel and core all the apples. I do it in front of the TV since it takes so darn long. Yes, I have a TV in the kitchen. Don't judge me! Cut the apples into thin slices and place in a large mixing bowl. Combine all ingredients with apples slices and blend well.
Place mixture in 11x8” or 13x9” baking dish. You want the baking dish to be filled just about to the top. It will settle after cooking. If you're like me you will set this dish far out of arms reach. They are just as good raw as they are cooked in the cobbler. I always find my self picking. I convince myself I am testing to make sure I have the right mixture of everything.
On to the second part. The crumb topping. This part is optional but adds extra texture and flavor. I also use this crumb topping on my zucchini bread. It has many uses. At this point I preheat the oven to 425 degrees. You will need the following ingredients.
~ ½ C of flour
~ ½ C of brown sugar (you can use white sugar)
~ 1 t cinnamon
~ ½ stick softened butter
(optional) ~1/4 C crushed walnuts
In a medium bowl combine all ingredients with a fork. Mash and blend till you reach a crumbly consistency.
At this point I have seen several episodes of Sponge Bob (my favorite cooking companion!) and am ready for a break. Time to stretch the legs and play with the kitties a bit.
Ok, onto the last part. Here are the ingredients you will need.
~ 1 C Bisquick
~ ½ C milk
~ 4 oz cream cheese (½ a stick or small tub)
~ 1/3 stick of butter
~ 1 t cinnamon
~ ½ t nutmeg
First you need to soften the butter + cream cheese. I do it in 15-20 second intervals in the microwave till I have it where I want it. Don't over do it. Just need it soft enough to blend. Now combine all ingredients in a bowl and mix well with a wooden spoon. Should be a loose sticky batter. Add more milk if batter is too thick.
Drop globs of batter onto the apples in the baking dish. Just random dollops. It will spread and mix within the apples as it cooks. Now add the crumb topping. I like to add it only to the area of exposed apples and not so much on the cobbler. You do as you please. You are the one eating it.
OK, time to bake this masterpiece. Cover loosely with foil. Place it in the center of the oven. I put a cookie sheet under it to catch any juices that may bubble out. Cook for 15 minutes at 425. Then cook for an additional 50 - 60 minutes at 350 degrees. Remove the foil after 30 minutes so that the crumb topping can get crunchy.
Now sit back and bask in the aroma of the baking apples! Yes, you caught me licking the bowl. Now stop being nosy! Make sure to have whipped cream or vanilla ice cream available. My favorite is Breyer's french vanilla. I serve it warm with ice cream. Of course you can serve it how ever you please. Enjoy!!
